Carries Hash Browns
Sometimes you run across a sale
item and go for it. In this case it was
frozen Hash Browns and you can fix them according to the package or try this
delightful Mother’s day treat baked in the oven.

Cheesy Hash Browns
Adapted from one of the Disney Cookbooks
1 two pound Bag Frozen Shredded Hash Browns
1/4 c. Red Onion
1 tsp. Extra Virgin Olive Oil
1 c. Fat Free Half & Half
1 c. Reduced Fat Sour Cream
1/2 c. Asiago Cheese, shredded (or Jack or Swiss)
1 1/2 c. Reduced Fat Cheddar Jack Cheese, shredded
1 tsp. Kosher Salt
1/2 tsp. Fresh Ground Black Pepper
In a small sauté pan, heat oil and cook onions until they become translucent. In a bowl, mix together the hash browns, cooked onions, half & half, sour cream, Asiago cheese, 1 cup of the Cheddar Jack cheese, salt and pepper. Mix until all ingredients are well blended, then place in a 9" x 13" oven safe baking dish and sprinkle the remaining 1/2 cup of Cheddar Jack cheese on top. Bake at 400 degrees for 45 minutes. Serves 9.

Well, now, you know I'm a big fan of hash browns! This casserole looks delicious--I'd have to forgo the onions an cheese, though. Isn't that sad? When you take that away, you really just have plain old potatoes.
I used to make this kind of dish, though, before I discovered all my limitations, and I felt like I could eat the entire casserole dish all by myself, I loved it so much!
