Meringue Spice Cake

There are times you want a cake, but you are out of a cake mix.

Mother always had some favorite recipes for home made cakes.

This one is simple and the frosting is different and very good.

Meringue Spice Cake

2 cups flour
1 1/3 cup sugar
1 1/4 tsp baking powder
1/3 tsp soda
1 1/2 tsp cinnamon
1/8 tsp cloves
Sift dry ingredients together

In large bowl mix:
1/2 cup shortening
3/4 cup buttermilk
1 tsp vanilla
2 eggs (plus 2 egg yolks) Save whites for the topping.)

Add dry ingredients and mix well. Bake in oblong pan 35 to 40 minutes
350 degrees if glass pan, or 375 degrees for metal pan.

Meringue Topping: Beat 2 egg whites until stiff and slowly add 1 cup brown sugar.

Carefully spread on top of warm cake and sprinkle 1/2 cup chopped walnuts on top.
Return to oven and bake additional 10 minutes.
