ZUCCHINI QUICHE Without CRUST

This easy recipe was discovered on cooks.com.  You might enjoy this simple to make quiche without the crust.

4 cups thinly sliced zucchini
1 small chopped onion
1/2 cup salad oil or Olive oil
3/4 cup Bisquick
4 eggs
1/4 cup grated Parmesan cheese
1/4 cup grated Swiss cheese
1/2 tsp  Italian seasoning
1/2 tsp  parsley flakes
1/2 tsp salt
1/2 tsp pepper

Sauté the onion in the oil until soft.  Mix all ingredients together. Coat well. Pour into a 9 or 10 inch pie pan or 9 inch quiche pan. Bake 30 minutes at 350 degrees.  Serves 8 people. This can be made 2 or 3 days ahead, cooked and then refrigerated.  Heat when ready to serve, 1/2 hour at 325 degrees.  

Serve with green salad with cubed fresh tomatoes.

I haven't gotten one zucchini from my plant yet. One plant died, and the other one's been a nonproducer so far, maybe because of our drought, even though we watered. I am certainly hoping it will give us some!

When I was in high school and announced to my mom that I was going to be a vegetarian, she supported my decision by making dishes that would work as side dishes for the rest of the family or a main dish for me. This was one of her staples, using Bisquick for a crustless quiche! She'd put all kinds of things in it, like tomatoes and cheese and other veggies. When I told her a couple of months ago that I was going to eat vegetarian again, she was staying in our home at the time and about a week later, guess what she made for us? Yes, she kindly whipped up a crustless quiche with tomatoes and cheese. :)

It pays to stop by Hazel's site! What a cool recipe. I never knew Ann was a vegetarian in high school. I was a crazy calorie counter in high school. I would write down the foods in a notebook just like my Mom who was on weight watchers. My daughter would prefer I made more meals sans meat, so thank you for posting friend!
